CARMEN CAMARENA
With over 20 years of experience, all of my recipes are made with care, attention to detail and innovation. Ranging from modern to classic dishes, my passion is in bringing you and your family homemade unique plates that will keep you happy and healthy!
How I began. A few years ago I was diagnosed with IBS and Gluten intolerance. I was always blotted and feeling tired. That’s when I made the decision to change my diet, excluding all kinds of dairy products, which was very hard for me as I was addicted to dairy products, especially cheeses. But I knew that if I made a radical change in my diet I would leave my discomforts behind. But for me eating cheeses was fundamental in my diet. So it is at that moment, that I decide to start making my own nut based-cheeses using raw and local ingredients. Combining my flavor with a deep passion for health and sustainability.
Now I am creating my products inspired by artisan, vegan and raw cuisine. My mission is to create traditional Artisan products with new techniques to create my plant-based cheeses which is produced by hand in small batches. My Cheeses go through a process of fermentation and aging following with an extra flavor with herbs, spices, and a variety of tasty gems found in the plant kingdom.
Inspired by traditional cheesemaking methods, our cheeses are cultured and aged, creating a unique range of products that will hold their own on any cheeseboard.
Our cheeses are free of soy, xanthan gum or other fillers, binders or preservatives.
